This week’s Tuesday’s with Dorie recipe was hosted by Cathy of the Tortfeasor. She chose Tender Shortcakes (hence the title 0f this post).
I have to admit that this week I had a bit of trouble getting to do this recipe. We are not big biscuit people and we are also trying to lose weight for my brother’s wedding in August. Rocker Dude has a suit he has to fit in to and I have a dress to make. So we are really cutting back on the baked goods in the house, and any leftovers have to go to work with me or otherwise out of the house. But then I said to myself, I need to get back on the horse and keep up with my Dorie recipes. After reading everyone else’s comments on the blog I realized that I didn’t want to make the whole recipe (15 shortcakes is way too much). Conveniently I had exactly 1 cup of flour – I could quarter the recipe.
Rocker Dude threw out his back yesterday while playing with the Little Rocker. Unfortunately for him he couldn’t afford to lay in bed all day because his final test lesson is today and he had to give a class and get graded on it. On top of that he had a presentation to give in his educational psychology class. So he is loaded up on ibuprofen and Bengay and we hope for the best. Either way he was trying to concentrate on his work while laying on the couch – perfect target for the approaching Little Rocker. She loves “playing” on his computer and is quite adept at pressing all sorts of buttons and shutting it down at inopportune moments.
I decided to take pity on him and get the little girl out of his hair. I brought her into the kitchen and we made these shortcakes together. I gave her a pastry cutter and then she helped me mix everything together and we made three big shortcakes – one for each of us.
When they came out of the oven, they smelled heavenly. They were crispy on the outside and tender flaky on the inside. I didn’t have berries because of their exorbitant price (think about $5.50 for 1/2 cup of blueberries or raspberries) so I just smeared one with strawberry jelly and one with butter. They were delicious and everyone enjoyed them. (I saved the last one for lunch today to eat with soup- mmmmmm).
